Short of seeing it done firsthand, or talking to some real experts on the subject, your best bet would be to access the books by

K.Bharata Iyer (titled Kathakali, a classic from the 50s that is oft-quoted -- you can still find it in some used book stores)
David Bolland
Clifford Jones

for detailed descriptions. Since the 90s, Margi in Trivandrum also has published some very good books on Kathakali, Kutiyattam and has put out some DVDs too. For example

"Kathakali,the art of the non worldly" (1994)
Editors: D. Appukuttan Nair and K.Ayyappa Panikker (MARG publications, Mumbai)
