It is Monosodium glutamate - also called Ajinomoto after the big (Japanese) manufacturer of this product.
Chinese, Japanese and other East Asians use this as a flavor enhancer in their dishes. Prolonged use has been suspected to cause high blood pressure and heart attacks.
