To your question "Does supply create demand or demand creates supply?" in the context of performing arts, first supply creates demand and demand arises out of popular choice for the novelty. Rasikas do not imagine the novel idea and make demand on the performer, in the first instance. The novelty attaining the popularity, entices the performer to meet the demand and to all those performers wanting to meet such demands, they choose to be controlled by the rasikas, willingly.

To your poser "where would viruttams and tillAnAs go?", the cutcheri format in CM, consists of devotional numbers at the end of the concert-a dasara pada, Thiruppugazh/Thevaram, tarangam, viruttam and other devotional number. The performer and the rasikas, having enjoyed the music arising out of the vidwath of the performer, pay obeisance to the supreme God, free from the need to show case the vidwath, but focussing on the bhakthi(with rakthi) offering only. The tillana is used to rev up the mood from sober state of mind.

Abhang phenomenon is only a last a long history of imports from south of the central and northern traditions. Reasons may be different, ranging from the exotic tastes, so that the syncretism of companies which the will of the artist to combine the different parts of his life and cultural heritage.
